Parcela Benjamin is a 1.11-hectare farm owned by Benjamín Martínez Ruiz, where he grows Caturra and Bourbon varieties. The coffee is grown under a cover of shade trees and plants, and the farm is certified organic. Coffee here is picked ripe and depulped the same day, then fermented for 18–28 hours dry before being washed two of three times. It’s dried for three to four days on patios.
